Vinnie (aka Chef Vaclav) started his career in a French Inspired fine dining restaurant in Prague, Czech Republic. He rose through the ranks being inspired by the clean & delightful presentation of dishes. His true passion is to create eye inspiring delicious food for diners with French-Asian & Modern Australian inspired flavours.

Vaclav has the utmost passion for ingredients – always visiting the local markets in Sydney and hand-selecting his produce. He loves to select his seafood fresh on the day checking in with the fishmongers on the best available catch from the ocean. Then visiting the farmers market and check out the fresh vegetable produce. Visiting the butchers & talking through the story of the product that he is looking to serve. His utmost dedication to choosing the greatest ingredient added with his simplistic cooking style inspired by the European Technique he learned and the Asian flavours he has experienced brings the best of the produce on the plate in a delightful visually appealing presentation.

Vaclav has learned a lot through his career as a chef and is one of the brightest talents we can see out there in the Sydney market. Being completely open to learning new techniques and cuisines & combining these with his strong French-based training & heritage of his family & traditions of his country.

His travels around Europe & Asia has inspired a lot of his dishes and his network of chef-peers from around the world build upon his knowledge on a daily basis. His presentation is extremely delicate and Instagram worthy, topped with his eye for detail & exceptional flavour profile Vaclav makes a rising star chef not to be missed!

Favourites

Vaclav's favourite dish, or more an array of ingredients, is a ceviche. He loves the flavour profile of Modern European Cuisine entangled with French technique and fusion of South American ingredients together with the Freshest and best seafood in the world we have down here in Australia. When he puts a ceviche together he uses his memories from the past and his strong French-based techniques to match the flavours of the fish with the curing techniques of the Peruvians creating the perfect ceviche dish that tastes extraordinary balanced and looks delightful.
