Bio
Rukesh Aryal grew up in Nepal, where his love of cooking began at home. Watching his mother cook over wood fires, with cast-iron pots and produce grown just outside the door, taught him early that great food comes from honest ingredients and heart rather than complexity β a philosophy that still sits at the centre of everything he cooks.
Moving to Australia turned that childhood passion into a profession. Working in commercial kitchens sharpened his discipline, organisation and technique, and introduced him to new produce and contemporary methods β building the adaptable, considered approach he now brings to private dining in Darwin.
His cooking is Nepali at heart, opened up with Indian spice and a love of American-style barbecue and fire. He takes the aromas and home-style flavours of his upbringing and plates them with modern technique and the best Australian produce, creating food that is bold, comforting and unmistakably his own.
Nothing captures him better than his Nepali chicken momo. Hand-folded dumplings of spiced minced chicken, steamed until juicy and served with a bold tomato, sesame and chilli sauce, momo is the dish he is proudest to cook β a taste of family, patience and celebration. He especially loves serving it to first-timers and watching their reaction to their very first momo.
For Rukesh, food is a way to tell stories and bring people together. Vibrant and generous company at the table, he loves sharing the meaning behind each dish and introducing guests to his heritage, tailoring personalised menus that give every dinner its own sense of occasion. He is also committed to sustainability, sourcing fresh, local ingredients and supporting Australian producers wherever he can.
