Chef Nick finished a Chef course & Diploma in cookery in Le Cordon Bleu. Working in different restaurants around Australia gave him the chance to develop his skills and abilities to create a dish from his memories in a new fusion way that everyone can enjoy in this modern world – he love crossing Australian & French flavours with asian textures & ingredients to create unique dishes that talk about his heritage, experience and aspirations.

“It is a perfect opportunity that CHEFIN provides me to do the things I always dreamt of doing – cooking in front of guests that will appreciate my dishes for their originality & taste rather than a restaurant name.

Situation I am proud of: we managed to run a boxing day service for 130 guests with 2 other colleagues when there was power outage and no running water in the venue. We were using head torches and buckets of water with lots of disposables gloves to ensure food safety. All guests were delighted we managed to deliver their meals and we are proud to pull out a successful service with such tough circumstances.

Favourite Dish: Scallop ceviche topped with a green tartar sauce & green papaya slices and finished with a crunch Australian native-finger lime.”
