Raffaele Pelligra’s love of food began in childhood in Sicily, where cooking was simply part of life. For years it stayed a passion rather than a profession — until he realised his food was meant to be shared, and that his intuition and curiosity had something to give. He took the leap into professional kitchens, and hasn’t stopped learning since.
Much of his style was shaped on the road — exploring European and Asian markets, cooking alongside local producers, and absorbing the stories, people and flavours behind each place from Sicily through Europe and Asia to Australia. That journey gave him a genuinely global palate, grounded in the honest, ingredient-led cooking of his Sicilian roots.
His food is a natural meeting point of Italian and Mediterranean tradition and Asian inspiration — authentic homemade comfort dressed with modern elegance. He cooks to engage all the senses, celebrating seasonality and letting quality ingredients lead, so each dish feels both refined and deeply personal.
Nothing captures him better than his reimagined tteokbokki: Korean rice cakes boiled to a gnocchi-like chew, paired with caramelised eggplant, a caponata-style Sicilian soffritto and a touch of prosciutto, bound with fermented chili, soy and sesame.
