Passionate about food and connecting with people, Chef Carlos left behind a career in finance to pursue his true calling in the culinary world.

His favourite part about being a Chef is seeing the reactions of clients when they taste his food, and working in the bustling kitchens with a great team of people. He also loves the picturesque locations he can work from as a private chef – like the Sydney Opera House.

One of Sydney Private Chef Carlos’s favourite cuisines is Japanese. Being the 2nd largest population in South America and the most popular cuisine (by far) it is no surprise! He spent extended periods tracing Japanese food’s influence on South Americans and their eating habits. With the most extensive journey bringing him to Peru where the Nikkei cuisine originates from! Nikkei stands for a fragrant & vibrant vision of South American & Japanese flavours fused together into mouthfuls of delight. One of the most famous Nikkei restaurants in the world, Maido, is where Chef Carlos fell in love with the delightful flavours of ceviche. He drives a tremendous amount of respect & inspiration to Chef Mitsuharu Tsumura!

Chef Carlos’s experience spams from Financial Services & Consulting with the Big 4 to owning 45 stores of OakBerry master franchise licence of Australia & New Zealand. He assisted the Greek Chef Peter Conistis in setting up ALPHA VIP menus & catering offerings!

    Chef Carlos was wonderful. He was professional, creative, patient and highly skilled. All guests were not only impressed with what was served but wanted to know how the menu was created so perfectly to suit everyone’s needs and tastes. | The duck canapé was my personal favourite, but was also surprised with how much I liked the halloumi (I’m not usually the biggest fan but the taste and presentation was exceptional)

    CHEFIN Co-founder and CEO Petko was very communicative, trustworthy, and generous in working with Wholesale Investor to organise our event for our shareholders, sponsor, clients, and network within our budget and to match our brand. We valued Petko’s experience, advice, and network. Chef Carlos designed an attractive gourmet menu accommodating various dietary preferences and created delicious canapes. The alcohol was delivered early so we had a lot of time to chill the beer and set up the bar. The service was top quality – CHEFIN staff went around the room offering our guests canapes and drinks, and topping up drinks, so the guests could enjoy networking. The event was very successful, resulting in satisfied attendees and collaboration opportunities. We are looking forward to CHEFIN catering the VIP room at our flagship conference (which will attract 3000 registrations) in a few months. We love working with CHEFIN and will continue working with them and recommending them to others. | Rhythm especially liked the dessert

    What a wonderful experience! Chef Carlos was so lovely and the food was divine! It added such a special touch to our celebration. | This is difficult as the Canapés were amazing, the lamb shoulder melted in your mouth, the salmon was perfectly cooked and the sides with it were all fresh and tasty!

Thank you for making this celebration intimate and special. | That’s too hard as they were all delicious! The Peruvian ceviche was incredible and probably my favourite but the serving size was too generous so I felt wasteful when I couldn’t finish it! The beef main was cooked to perfection and it’s hard to go past the chocolate soufflé – it left our whole house smelling amazing. Thanks again 🙂 | Thanks Petko for helping us arrange a fabulous and intimate dining experience – we all enjoyed itimmensely.

The timing of the dishes and drink pairings were not great – there were big gaps between some of the early small dishes when people were really hungry and some of the warm food arrived cold. Some tables got drinks timed with their food, some tables got drinks way later. So the drink pairings didn’t really work. I’d recommend coordinating more tightly on timing. We also didn’t know we could ask for more drinks than the one drink pairing throughout the evening, so that would be good to communicate clearly.
