Lemon baked salmon

Lemon baked salmon, turmeric quinoa, kale, roasted pumpkin

Nutrition per serving


  • 200g of Salmon Fillet
  • 1 Lemon
  • 2 leaves of Basil
  • ½ cup of Quinoa
  • ½ bunch of Kale
  • 150g of Pumpkin diced
  • ½ of Red capsicum (sliced)
  • ½ tsp o fTurmeric powder


  1. Step 1

    Roast the diced pumpkin for 30 mins at 175c, keep aside

  2. Step 2

    Marinate salmon fillet with salt and pepper, parcel in a baking paper & foil with a slice of lemon and basil leaves. Bake in a preheated oven at 175c for 15-20 mins

  3. Step 3

    Rinse the quinoa, bring to a boil 1 cup of water and add the quinoa along with turmeric and salt. Cook on simmer until done. (the water is absorbed)

  4. Step 4

    In a hot pan saute sliced capsicum, add in the kale and toss, add the pumpkin and quinoa. Season and mix well.
